It is made possible by collective participation in the entire traditional food chain: from planting and harvesting to cooking and eating. The basis of the system is founded on corn, beans and chili; unique farming methods such as milpas (rotating swidden fields of corn and other crops) and chinampas (man-made farming islets in lake areas); cooking processes such as nixtamalization (lime-hulling maize, which increases its nutritional value); and singular utensils including grinding stones and stone mortars. Native ingredients such as varieties of tomatoes, squashes, avocados, cocoa and vanilla augment the basic staples. Mexican cuisine is elaborate and symbol-laden, with everyday tortillas and tamales, both made of corn, forming an integral part of Day of the Dead offerings. Collectives of female cooks and other practitioners devoted to raising crops and traditional cuisine are found in the State of Michoacán and across Mexico. Their knowledge and techniques express community identity, reinforce social bonds, and build stronger local, regional and national identities. Making real tortillas includes grinding the "nixtamal" (dried field corn soaked in hot slaked lime and water). The lady uses a "metate", flat volcanic stone and grinding stone with both hands to get the "masa" dough. The dough is then pattered in a circular form, tossed a little and placed on the "comal", over the fire to get cooked. Once done they are placed in a basket. Tyler Florence gets away from the traditional notions of Americanized Mexican food and travels around Mexico to find the real heart and soul of Mexican cuisine. The country has a number of regional variations and eating is a way of life. Tyler starts his journey in Mexico City, once the culinary gateway between Europe and the America's. Here he explores the vibrant markets and discovers just how hot chilies can really get. A quick sip of tequila takes him to the cactus heartland of Oaxaca where he finds out how tequila's sister drink, mezcal, is made. Tyler samples some excellent chocolate, another favorite of all Mexicans. In the beautiful city of Puebla, Tyler learns how to prepare the national dish, Mole, turkey with chocolate sauce, originally invented by a local nun, by accident. The Mexicans love to celebrate and Tyler happens upon a seven-day festival totally dedicated to vanilla. His journey ends on the east coast where Mexican flavors blend with the Caribbean sea.

Machaca Burrito Recipe - Americanized Mexican Food with Avocado & Salsa Ingredients: 2.5 pounds oven roast trimmed 4 chopped cloves garlic 1 chopped white onion 8 eggs 1 tablespoon taco or burrito seasoning 6 flour tortillas burrito size 1/2 cup salsa Preparation: Add garlic and onion to cooking oil. Stir Add beef cook each side until brown Cover with water and simmer 3 hours (yes THREE or more) Remove and transfer to skillet Break apart and add 1 cup broth Add seasoning Simmer 20-30 minutes until liquid disappears Add salsa Add scrambled egg and stir until egg is done Wrap in tortillas with avocado Grill both sides until golden brown
