Spanish is the official language of Mexico but many of the Indian cultures still speak their native languages, and even though Mexicans are the product of four centuries of European influence, they have not abandoned their Indian past. In fact, the Mexican people are proud of their rich heritage as they continue to carry on customs dating back hundreds of years. More than 22 distinct Indian cultures survive today from the Huichol in the north to the Maya and Zapotec in the south. Mexico is truly a timeless country as ancient and modern customs and values come together to weave a complex and fascinating tapestry. The beginning of civilization in Mexico is still a mystery and even though there are over 11000 ruins already excavated, new discoveries are constantly changing our information about the past. Nobody really knows what remains hidden in the jungle, or what new discovery may unlock secrets that have eluded archaeologists and historians for generations. It's a giant puzzle that lacks all the necessary pieces to complete the picture of ancient culture and tradition. The basis of the system is founded on corn, beans and chili; unique farming methods such as milpas (rotating swidden fields of corn and other crops) and chinampas (man-made farming islets in lake areas); cooking processes such as nixtamalization (lime-hulling maize, which increases its nutritional value); and singular utensils including grinding stones and stone mortars. Native ingredients such as varieties of tomatoes, squashes, avocados, cocoa and vanilla augment the basic staples. Mexican cuisine is elaborate and symbol-laden, with everyday tortillas and tamales, both made of corn, forming an integral part of Day of the Dead offerings. Creative Commons license: Public Domain The first major wave of Mexican migration to Chicago began in the mid to late 1910s, spurred on by the economic, social, and political displacements of the Mexican Revolutionary years and the rise in industrial and agricultural employment in the United States. Arriving through both direct and indirect routes, Mexicans worked as unskilled and semiskilled laborers in agriculture and heavy industry, including the Rock Island, Santa Fe, and Burlington railways; Inland Steel; US Steel; Beetsugar Company; and the Armour and Swift packinghouses. The predominantly male Mexican workforce, and the solos, migrated into Chicago from agricultural fields throughout the Midwest and from towns and villages in Texas and the Central Mexican states of Guanajuato, Michoacán, and Jalisco. Those who came were more likely from the middle class than from among the poorest peasants. Like many of the African American workers of the Great Migration, some Mexicans were hired to break steel and packinghouse strikes in the late 1910s and early 1920s, thus placing them in conflict with European workers. By joining ordinary people in these strange and wonderful distillations of their culture and beliefs, he hopes to gain a revelatory insight into how the world thinks and feels. Stefan goes on a wild emotional and spiritual rollercoaster ride, starting with a teenage girl's bizarre coming-of-age ceremony and ending with the Day of the Dead, a cacophonous cross-cultural festival of the senses during which Mexicans truly believe that their loved ones come back from the dead for three days every year to spend the day with them. In Oaxaca, he is dressed up as a dead woman and made to dance like a lunatic at the head of a procession as it makes its way through town. He is turned into an emotional wreck at the moment the dead return, bursting into tears as Dias de los Muertos makes him experience grief and loss for the first time. But then in the next breath, the family Stefan is living with teach him to celebrate and laugh at death. They turn his views on their head, allowing him to embrace and conquer his fear of death through an extraordinary sensual onslaught of food, flowers, songs and smells. The sight of the graveyards overflowing with flowers and mescal-drinking revellers is a truly life-changing experience. .
