Haitian Food: How to make Riz Djon Djon

INGREDIENTS: Onions (chopped) Garlic (chopped) Parsley Clovers Thyme Oil Salt Garlic Powder Lima Beans Rice (brown or white optional) Djon Djon Mushrooms [Prepare the Djon Djon mushrooms 30 minutes in advance before cooking the rice. Place the mushrooms in a bowl with water (5 cups of water for 6-8 ppl) and let it seep for 30 minutes.] Preheat pot on stove. Once heated pour oil, chopped garlic and chopped onions into pot. Let the onions and garlic take color then pour the lima beans in pot and stir. The bowl of mushroom water has now taken color. Pour out the water into a new bowl with a strainer to remove the remains of the mushrooms (optional). Squeeze the juice out of the mushrooms to make sure none goes to waste! Pour the bowl of mushroom juice into pot slowly then stir. Drop about 4-6 clovers [in the pot], a few branches of thyme, some parsley, also salt and garlic powder to finish it off! Oh yea, keep stirring! Put the lid on and let it boil for about 10 minutes. Meanwhile, prepare your rice. Use 5 cups of rice for about 6-8 ppl. PLace rice in bowl and wash with lukewarm water. Rub the rice on hands to remove dirt and rocks and pour out the water. Grab a handful of rice and place it in the pot and stir. This time do not cover with lid to let the rice dry up. After 10 minutes put the lid on and wait about 15-20 minutes. BONNE APETIT!

June 2008 Haiti is facing a major food crisis as riots break out in the capital Port-au-Prince. Five people have died, the Prime Minister was forced to resign and authorities fear the worst is yet to come! All produce, even eggs, are imported here, leaving Haiti at the hands of the global market. Although blessed with fertile land, farmers have no machinery and are forced to use their hands. A farmer says "we cannot compete with other farmers who have the technology to back them". People are even eating mud cookies to relieve hunger. The Haitian government have turned to International crisis funds for immediate food relief but what will happen in the long run?

We spent much of our time in Haiti, discussing matters involving water and food, in a manner North Americans speak about "National Security" and "Terrorism". I use that analogy to point out the discrepancy in each regions priorities. As we traveled through the marketplace I was struck their as everywhere in Haiti, how many people could use a plain old wheelbarrow or a kids toy wagon. Look at all these people walking, each carrying burdens meant for a mule, a car, or as discussed a wagon. Yet every day they do their best to get their food to market. The domestic market. Most Haitian food is consumed in Haiti. This is a market in the country, where they eat country food. However in the city, they can't get this food, because of transportation and communication issues (infrastructure). So most of the rice and other foods eaten in Port Au Prince are imports. Now remember how poor Haiti is. How are they going to eat imported food? And why eat imported food when domestic food is their as in this video, enough to feed the nation? What is the United Nations and 10000 NGOs doing in Haiti? I was thinking a convoy of trucks to get the food from the farmers yard to the market in the country and then to Port Au Prince might be a start : ) For more information visit us at http:www.thehopenetwork.org.

Haiti earthquake survivors scavenge for food
