On October 15, 2009, agents for the Georgia State Department of Agriculture searched our truck without a warrant and seized 110 gallons of raw milk purchased by a number of individuals at a USDA Grade A fully licensed raw milk dairy in South Carolina. The agents were not able to haul the milk away themselves, so they left it impounded on the truck. Four days later, they returned along with a federal agent from the Food & Drug Administration to force those individuals to destroy the milk they had purchased.

Khachapuri is a home-made cheese bread made in Georgia (in the Caucuses but not in US of A) with MATSONI (fermented milk) and SULUGUNI (cooked cheese, rather salty). This recipe shows a downgraded version with ingredients easily available in any supermarket. Ingredients: - 2 cups bread flour - 1 cup sour milk - 1 teaspoon instant yeast (can be substituted with 1 ts baking powder) - 1/2 ts salt - 400g cheese (combination of mozzarella and any other cheese that melts well, 40/60) - 1 egg - Butter to grease bread to prevent crust Fry on preheated heavy skillet on medium heat for 5 minutes on each side, then grease with butter and cover with cloth to keep from drying. Yields two khachapuris. You can eat it hot or cold. The only reason I was using lids was to measure flatbread size because I was using different skillets :) And you don't really need a rolling pin, you can do everything by hands in less than a minute! (Hint: Try different kinds of cheese or add fresh coriander to the filling!)
