In June of 2011, Austin independent filmmaker and journalist Matt Gossage went to El Salvador as a delegate of CISPES, Committee In Solidarity with the People of El Salvador. Matt shared food, pictures, sounds and stories of the delegation and will report on the exciting political and social developments in El Salvador. CISPES' "Living the Change" delegation brought a diverse group of US citizens to El Salvador to learn and experience the work of the grassroots social movements that are fighting for justice and human rights. From funding and actively supporting the civil war from 1981 to 1992 and currently imposing its economic model on El Salvador, the United States has a close relationship and responsibility to the people there and their struggle. From environmental destruction, disastrous neo-liberal economic policies, unsustainable agriculture, lack of health care, a draconian criminal justice system and the attack of community media; the resistance in El Salvador is fighting the same systems as the resistance here in the United States. This report-back focused not on the problems in El Salvador, but the solutions organized movements there are using to bring democracy and justice to their country. NetworkNewsToday: 12 December 2009 - - (UNICEF) - UNICEF is providing aid to El Salvador following devastating floods in November that killed over 190 people, left 80 reported missing and displaced thousands. Hundreds of homes were destroyed and thousands damaged. Heavy rains from Hurricane Ida and another severe weather system in the Pacific battered five Salvadoran provinces, including La Libertad, where Melara is located. Today, the displaced residents of Melara are living in a shelter set up in the nearby school that Ismael and his friends normally attend. They were among the 75000 Salvadorans who had to flee their homes when floodwaters rose quickly in the early morning hours of November 8. A month later, at least 5000 were still living in shelters like this one. About 100 people were killed in the floods, and dozens are still missing. This family at a shelter in Ilopango, near the capital, lost two teenage sons in the avalanche of rocks and mud that took many by surprise as they slept. In the immediate aftermath, displaced families desperately needed essential supplies, including food and safe water. Government and humanitarian agencies responded quickly enough to prevent widespread disease outbreaks. UNICEF delivered 250000 litres of bottled water in those first days, for example, and more in the weeks that followed. This is our interpretation of Curtido; a cabbage salad recipe from El Salvador. Now as most recipes do, the ingredients will change in different regions and even between families on the same street. So feel free to make changes and really make this recipe your own. This is a recipe that really benefits from a day or two in the fridge before serving. Ingredients: 1 medium head red or green cabbage, sliced thinly 2 medium carrots, shredded 1 small red or white onion, sliced thinly 1/2 cup white vinegar 1/2 cup water 1 tsp. oregano 1 tsp. crushed red pepper flakes salt to taste 4 cups boiling water for blanching. Method: Thinly slice the cabbage and onion Shred the carrots Place in a large heat proof bowl and pour the boiling water overtop to blanch - 5 minutes. Meanwhile mix the remaining ingredients in a small heat proof bowl. Heat Vinegar mixture in microwave for 1 minute. Drain cabbage, carrot, onion mixture. Stir vinegar mixture into cabbage mixture. Move to an airtight container, and store in the fridge. Variations: Substitute pineapple vinegar for the white vinegar, if you can find it.
