I have never been a fan of hominy. Then we think it has some white melting cheese, such as queso fresco in it and slight bit of sugar. And finally it is wrapped in a corn husk. According to Wikeapedia here is the ingredients in an Ecuadorian humita. in Ecuador humitas are prepared with fresh ground corn with onions, eggs and spices that vary on the region, and on each family's tradition. The dough is wrapped in a corn husk, but are steamed rather than baked or boiled. Ecuadorian humitas may also contain cheese. This dish is so traditional in Ecuador that they have developed special pots just for cooking humitas. Ecuadorian humitas can be salty or sweet. Thanks for watching!

Here in Cuenca you can eat out for lunch for just $2.50 or less! The food is wholesome and fresh plus they serve you a lot of food. Usually an Ecuadorian lunch meal consists of a first course of soup, the main meal, and maybe a dessert, and either yogurt juice, or freshly squeezed fruit juice. It is amazing the amount of food for the price.

Sam, loves to cook. During one of his stays in Cotacachi he and his friend Chris prepared a meal for me and Gary, which included a fruit cobbler that he insisted was incredibly easy to make. To prove it, he came to our apartment the next day and whipped up a peach cobbler. Sure enough, it was in the oven in no time flat and we ate the whole cobbler in one sitting. Gary captured Sam's unique style of cooking on video, so here it is for all of you who love to eat yummy desserts but don't want to spend much time preparing them. This is one of my favorite soups, it is very hearty and the flovor is amazing. i call this comfort food, it reminds me of my mom and watching her cook as i was growing up. i am sharing this great recipe with you guys, it is alot of work but the outcome is so good. you can always make the meatballs a day before or even a week before and freeze them. You will need to watch and make the ecuadorian style sofrito for this dish. if you follow the steps you will get the same delicious soup.
