This is adjeso. You can find this prepared here in Chile with lemon, onion and some herbs or they can make a souffle out of it. When they come to the market they are still alive and they have these interesting spines on them. This is what we call locos. You can find it here at the market. Usually it is supposed to be boiled with some mayonnaise. And it is delicious. Here we have beute, it is really high on iodine and it is a vitamin rush.
